Sago, also known as Sabudana or Tapioca, is derived from cassava or tapioca root by removing the milk, forming globules and drying them in the sun. These beautiful, white pearls are very nutritious and become soft and spongy when cooked.
Sabudana refers to the starch that is extracted from tapioca roots, which is then processed to form spherical pearls that may vary in size. The pearls are produced by passing the moist starch through a sieve under pressure, and then dried.
In Indian culture, sabudana is considered as almost a staple diet option during any ritualistic fasting.
